Crispy Quest Chip Air Fry Chicken Fingers

Sometimes the simplest recipes are the best.  These crispy chicken strips are a creation by our Elmwood trainer Danielle Veilleux.   Her goal…to make a tasty chicken tender that is packed with protein, low in fat and lacked the net carbs that would be typically be in a breaded or coated version.  With over a half dozen different flavors of protein chips available from Quest you can keep your taste buds guessing and cravings satisfied.

 

Ingredients (make two servings):

 

o   1/2 lb thinly sliced organic chicken breast

o   3  bags of Quest Protein Chips (pick your favorite flavor)

o   All purpose flour

o   2 cage free eggs

 

Instructions:

 

Using three separate bowls fill the first with flour, the second with lightly beaten eggs and the third with crushed Quest chips.  Dust each chicken strip thoroughly in flour, then dip in the egg wash and finally dredge in the crushed chips being careful to cover the entire strip. 

 

The dipping and dredging process can get a bit messy so be sure to use large enough bowls to keep everything contained.  It also helps to keep at least one hand dry during the coating process!

 

Set the air fryer to 325 degrees. Cook chicken for seven minutes then flip and cook for an additional four minutes.

 

Enjoy with your favorite salsa or low calorie dip that compliments the chip flavor you chose!

Meal Prep Made Simple | Crock Pot Chicken Enchilada Chili

We have heard the sayings time and time again, “abs are made in the kitchen” and “you can’t outwork a bad diet.  It’s easy to see why so many of us struggle with this notion.  Maybe finding the time to prepare meals in advance seems impossible.  Or it could be as simple as we don’t know how to cook healthy.  Luckily, delicious nutrient dense and calorie careful meals can be simple to make and not take up your entire Sunday in the kitchen.

Crock Pot Chicken Enchilada Chili Recipe

12 servings


Ingredients:

  • 3 (10 oz) cans diced tomatoes and green chili -no salt added 
  • 2 (10 oz) cans enchilada sauce
  • 2 packets low sodium taco seasoning
  • 1 (15 oz) can black beans
  • 1 (15 oz) can kidney beans
  • 1 (15 oz) can pinto beans
  • 2 lbs shredded cooked chicken breast
  • 8 oz light cream cheese
  • 1 bag frozen sweet corn


Optional: 

  • shredded cheese
  • rice (I like basmati)!


Macros: 

Per serving: Calories 362, Carbohydrates 38, Protein 27, Fat 12


Instructions:

Bake chicken at 400 degrees until the internal temperature reaches 160 degrees. Shred chicken then combine all ingredients in a crock pot at 200 degrees or medium setting and cook for at least 2 hours.

Portion out and top with cheese or serve over rice for added carbohydrate content.
